A Deliciously Simple Summer Salad

We’ve been using Hello Fresh for just under a year and a half now, and we still continue to enjoy and love it… one of the recipes we’ve been particularly enjoying though is their Beetroot, Lentil & Goat’s Cheese Salad. It’s refreshing, tasty and thanks to the lentils – super filling; and it’s also extremely easy to throw together, therefore I thought I’d share the recipe for you to enjoy – particularly as it’s perfect for the lovely weather we’re starting to experience again… enjoy.

Ingredients (Serves 2)

1 small can of lentils

3 peeled and washed beetroots

1 tbsp red wine vinegar

1 shallot

60g goats cheese

3 sprigs of dill

Large handful of walnuts

1/2 cucumber

1 bag of lettuce mix of choice (Hello Fresh use lambs lettuce)

1 tbsp honey

2 tbs wholegrain mustard

2 cloves garlic

1 tbsp lemon

Olive oil

Method

Slice your shallot finely, and add to a pan with some olive oil. Cook for a few minutes until soft, then stir in your crushed garlic cloves, stir until fragrant (about 60 seconds) and add in your drained and rinsed lentils. Once everything is heated throughout, take the pan off the heat, and set to one side.

Add a tbsp of olive oil, your mustard and red wine vinegar to the mix and stir until everything is nicely coated. Add a pinch of salt and pepper to taste.

Chop your cucumber and beetroot into small cubes, and finely chop your dill sprigs (you can include the stalks too). Crush, or roughly chop the walnuts.

Add your lettuce, cucumber, dill, beetroot and half the walnuts to a large salad bowl. Again, season with a little salt and pepper.

Whisk up your honey, lemon juice and another tbsp of olive oil, then toss through your salad mixture.

Stir through the lentil mixture, and crumble on the goats cheese.

Top with the rest of the walnuts and indulge.
