Getting into the Winter Spirit With Pumpkin Pie 

 

Complete novice baker? Fear not, this recipe has got you completely covered and will leave all your family and friends amazed this festive season. This is the easiest pie ever, you can even use pre made pastry. Everyone’s so busy over the festive period and we don’t always have the time to do everything, so I thought I’d help you out with a little cheat recipe…

Ingredients

1 tin of Libbys 100% pure pumpkin (I got mine from Tesco, if this isn’t available a normal can of pumpkin puree will be just fine)

150g sugar

1/2 tsp salt

1 tsp ground cinnamon

1/4 teaspoon ground cloves

1 tsp ground ginger

2 eggs

1 can (12 fl oz) carnation milk

1 roll pre made shortcrust pastry

Method

Grease a 9 inch pie tin. Gently insert your pre-rolled pastry, pushing it down into the tin. Cut away any excess with a butter knife.

With a fork, gently prick a few holes in the bottom of the pastry case.

In a large bowl, combine all dry ingredients and beat in the eggs.

Mix in your entire can of pumpkin, and gradually add the carnation milk until they are all combined.

Pour the liquid mix into the pastry shell and put into a pre heated 220 degrees celsius oven for 15 minutes.

After 15 minutes, turn the oven down to 180 degrees and cook for a further 40 – 50 minutes until the pie is set.

Allow to cool and enjoy with whipped cream.
